I love Asian food. But not your typical fast food, high sodium, super processed Asian Buffet.... Tonight my mom tried a new recipe we saw in Better Homes and Gardens. It's a Chicken Meatball Noodle Bowl with an Asian flare. I was delicious! It's super clean and healthy too! The rice noodles, in fact, are gluten free! With fresh cilantro, sliced fresno pepper, and fresh ginger this dish is bursting with color and flavor! I definitely recommend you try it out!
We added a little bit of Eden Organic Soy sauce, too.1 red Fresno chili pepper, seeded and finely chopped1/2 cup finely shredded carrot1. Prepare noodles according to package directions; drain and set aside.2. Meanwhile, in a large bowl combine ground chicken, ginger, cilantro, and salt. Shape into 16 meatballs.3. In large skillet heat 1 Tbs. of the coconut oil over medium heat. Add meatballs. Cook, turning occasionally, until browned and cooked through, about 10 minutes. Transfer meatballs to a plate. Turn off heat.4. Add the remaining 2 Tbs. coconut oil and chili pepper to the still-warm pan. Stir in vinegar, honey, and lime juice.5. Divide lettuce, noodles, and carrots among bowls. Top with meatballs, and drizzle with pan sauce. Makes 4 servings.Each serving: 358 cal, 17 g fat, 73 mg chol, 412 mg sodium, 35 g carb, 1 g fiber, 16 g protein
